The MFS Course and Assessment

The MFS course has been specially developed for fishmongers wishing to update their knowledge and hone their skills, prior to taking the MFS Recognised Fishmonger or MFS Advanced Fishmonger Assessment.

Candidates will need to complete an MFS workbook before attending the three-day course and assessment at the Seafood School at Billingsgate Market in London.

The course will cover a range of topics, including:

  • Seafood Quality Assessment
  • Fish and Shellfish Product Identification
  • Fisheries and Aquaculture
  • Hand and Knife Preparation Skills
  • Retail Display Skills

On the third day of the course, candidates will take the MFS Assessment at the School’s training facility. The prerequisite standards of the MFS tier must be fulfilled to take the assessment.

Independent Study

If you wish, you can prepare for the MFS Assessment day independently. The MFS have teamed up with the ‘Seafood Training Academy’ to provide you with a host of relevant learning resources and materials. There are video links, workbooks and information packs on a variety of topics related to being a fishmonger! All of the resources are free to download.

It is highly recommended that candidates utilise this resource prior to embarking upon their journey on the Master Fishmonger Standard.
